How do I change my MC skin for MP only?
You will have to BUY minecraft to change your skin. There's no other way.
you could change the Steve skin in minecraft > bin > mimecraft.jar / but only you will be able to see it.
Another Question:
How do you get entities (boats, minecarts, arrows, fishing bobber, etc.) to spawn in MP? (I can place them or use them, but they just wont be there... [quite problematic when trying to travel an ocean or fish])
